The purpose of your resume is to sell you to potential employers and this is the most important thing to keep in mind. You need to be able to explain gaps, and why you decided to not include a job on your resume.

Can I record a termination meeting?

Think how it will play out in front of a judge/jury that the fired employee asked to record the session and was denied.
